Mixed Herb Bun

Apa khabar semua?? Semoga sihat & bahagia sentiasa..



Jom buat savoury bun pulak. Haihhh, sy ni kalau tengok je resipi yg mcm menarik mesti nak try. Resipi ni sy terjumpa masa cari resipi egg custard bun..masih tuan yg sama. Roti2 yg dia buat sgt menarik. Dah la comel2 semua nya..mana la tak eksaited nak mencuba. Tgk dr rupa pun dah tau memang sedap. Siap ada meatloaf, mayo & cheese lg.

Jenuh mencari chicken ham tak jumpa, so sy guna turkey slice je la..derhaka lg kan. Tp kali ni tak brani nak over derhaka dah..hahaha. Cuma mixed herb tu sy kurangkan sedikit sebab aromanya yg agak strong. Sy pun guna muffin cup, sebab nampak sgt comel kejadian bun tu nnt. Lgpun kecik2 senang nak ngap, kalau tak cukup boleh ambil lg. Dan saiznya muat2 je Kashfe pegang..tp pegang je la, mkn nya hanya sesuap.

Bun ni memang konfem lembut, sebab resipi ni menggunakan tangzhou. Walaupun agak malas nak membuat tangzhou ni, tp bila terbayang hasil roti yg gebuss sy gagahkan juga. Selepas 2 hari pun roti ni masih lembut gebu. Tak sia2 la usaha sy membuat tangzhou..hehehe. Kalau korang taknak guna tangzhou, boleh juga digantikan dgn 2tsp bread softener/improver. Kebebasan memilih di tangan anda. Selamat mencuba..


Mixed Herb Ham & Cheese Bread Cups/Buns

[yields about 16 50g buns]

370g bread flour 
65g fine sugar
12g milk powder 
6g instant dry yeast
150g tangzhong **
1 egg yolk
125g fresh milk
75g whipping cream (I used non-dairy)
5g salt
35g unsalted butter
OPTIONAL: 6-7g dried mixed herbs (If you prefer plain buns, omit this)

Method:
1. Used function 8 of Kenwood BM 250 to prepare the bread dough. The entire machine process together with Proofing Stage 1 will take 1 hour 30 minutes. 

2. 10 minutes into the timer at 01:20, when the mixer starts mixing again, add in the salt and butter as well as the dried mixed herbs. 

3. Allow the machine to do Proofing Stage 1. When it's ready, the beeper will sound. Then, lightly flour your hands and "punch" the middle of the bread dough to allow excess air to escape. 

4. Then, remove dough from container to remove the 'blade'. Then, divide the bread dough into 3 balls/rounds and place it back into the bread machine which is turned off. Allow Proofing Stage 2 to take place in bread machine for 15 minutes.

5. Weigh the dough for the bread and shape them into balls. Once the bread cups/buns have been moulded, set them aside in a warm & dry place for Proofing Stage 3. This will take 50 minutes. 

6. 15 minutes prior to the completion of Proofing Stage 3, preheat your oven to 170 degrees Celsius. Top the bread cups with 2 slices of honey baked ham. Top with some mayonnaise & sprinkle some cheese!

7. Bake the bread for 17 minutes or till' bread is golden brown. You can test if a bread is cooked by poking a toothpick into the middle of the bread. It should come out clean and dry. 
Allow bread to cool before storing into air-tight containers.
